It wasn’t that long ago that I made these little darlings, but, honestly, it has been too long. Even looking at these pictures makes me want to whip up another batch!
I have a few vegan or allergy-free baking books. Each of them contains a few favorites, but so far, I am loving Cybele Pascal’s book. It was a gift from my sister-in-law for my last birthday. If you have ever considered baking this way, you should buy the book! She includes a flour mix to make every recipe easier, and there are 100 recipes! Obviously, a lot of yummy sweets, but there are even breads and savory things.
I will say that with this recipe I had better luck rolling out the dough and using the rim of a drinking glass (or cookie cutter) to make the cookies. I also had some peanut-butter buttercream leftover from some cupcakes that I used to fill some of the cookies. I liked the original cream filling better though :)
